Jiro's History
Sukiyabashi Jiro was founded by Jiro Ono in 1965 on the B1F of the Tsukamoto Sogyo Building in Ginza, Chuo-ku, Tokyo, where it still stands today.

Jiro's second son, Takashi, independently opened a store in Roppongi.

Profile of Founder Jiro Ono
1925
Born in Tenryu City, Shizuoka Prefecture (present-day Tenryu Ward, Hamamatsu City, Shizuoka Prefecture)
1932
At the age of 7, he began working as a servant at the local Japanese-style inn "Fukudaya".
1941
At the age of 16, he was conscripted to work at a munitions factory in Yokohama.
He was assigned to a unit in Toyohashi in 1945. He is in the fourth row from the front, far right.
1945
After the war, he worked at Fukudaya and then trained in Japanese cuisine at a restaurant in Hamamatsu.
1951
He became a sushi chef at the age of 25 after being introduced to Yoshino in Kyobashi, Tokyo by a customer from his time in Hamamatsu.
1954
He was sent to work as a master chef at Midori Sushi in Osaka at the request of the master chef at Yoshino.

1965
He became independent and opened Sukiyabashi Jiro at its current location in Ginza.
2005
The Ministry of Health, Labor and Welfare selected him as a contemporary master craftsman for "keeping with the traditions of nigiri sushi dating back to the Edo period, always striving to come up with new ideas and carrying on the style and spirit of Edomae nigiri sushi."
2014
He was awarded the Yellow Ribbon Medal in the autumn honors.
2019
At the age of 93 years and 128 days, he was recognized by the Guinness World Records as the "Oldest head chef of a three Michelin star restaurant."
